Salted Caramel Granola

Homemade salted caramel granola hits the spot for end of summer snacking, and dare I say will fill in well for the return to routine this fall.  But we’re not talking about that yet.  

At this point of summer, I’m looking for easy food to carry us through the next few weeks.   Salted Caramel Granola feels special, but is full of goodness as a healthy breakfast, an easy snack, and even a topping for some good vanilla ice cream.  Inspired to throw up my third variation on homemade granola today – hope you enjoy!  

Salted Caramel Granola

Ingredients

  • 2 1/2 cups old-fashioned rolled oats
  • 1 cup pecans, coarsely chopped
  • 1 cup unsweetened flaked coconut
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1 teaspoon kosher or sea salt
  • 3/4 teaspoon nutmeg
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup good maple syrup
  • 1/3 cup olive oil
  • 1/4 cup (runny) Tahini
  • 1 teaspoon pure vanilla extract

Instructions

  • Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
  • In a large bowl, stir together the oats, nuts, coconut, pumpkin and sunflower seeds, salt, nutmeg, and cinnamon.
  • In a small bowl, whisk together the maple syrup, olive oil, tahini, and vanilla.
  • Stir the maple syrup mixture into the dry ingredients until they’re thoroughly coated, then spread the mixture on the prepared baking sheet.
  • Bake the granola for 15 minutes, stirring it midway during baking.
  • Reduce the heat of the oven to 325ºF and bake until golden brown, 10 to 15 minutes more. While it’s baking, stir the mixture once or twice to make sure the edges aren’t burning or getting too dark.
  • Remove from the oven and let cool completely. Once cool, transfer the granola to an airtight container.
